2 1/2 lbs rump roast
1 1/2 lbs yellow baby potatoes
1 lb baby carrots
3 cups beef broth
1 onion
1 sprig rosemary
3-4 sprigs thyme
1 tsp salt, or to taste
1 tsp black pepper, or to taste
Directions
- Place the rump roast in the slow cooker and season with salt and pepper.
- Peel and quarter the onion.
- Add all remaining ingredients in the slowcooker.
- Cook on low for 7-8 hours or on high for 4-5 hours.
- Once cooked, cut the beef and serve warm.
