Ingredients

  • 2 1/2 lbs rump roast

  • 1 1/2 lbs yellow baby potatoes

  • 1 lb baby carrots

  • 3 cups beef broth

  • 1 onion

  • 1 sprig rosemary

  • 3-4 sprigs thyme

  • 1 tsp salt, or to taste

  • 1 tsp black pepper, or to taste

Directions

  • Place the rump roast in the slow cooker and season with salt and pepper.
  • Peel and quarter the onion.
  • Add all remaining ingredients in the slowcooker.
  • Cook on low for 7-8 hours or on high for 4-5 hours.
  • Once cooked, cut the beef and serve warm.
